Takayama, Gifu Prefecture, Japan. Hirata Brewery Co. Hida no Hana Shiro Junmai Ginjo There are 3 sake breweries in the old town street of Hida Takayama, and one of them is Hirata Sake Brewery, where you can taste the sake. When I showed him the sake I drank at the event, he asked me where I drank it! The event that the executive director was at," he laughed. It was apparently the executive director who introduced me to local food and drink. Sake I did not drink at the Gifu sake event. One of the 3㌥ bottles (3/9) I took home from the trip. We will have it cold sake. The color is clear and transparent. The initial aroma is apple-like with a hint of alcohol. The mouthfeel is clear, with a mild sweetness that gradually swells in the mouth, while a hint of acidity appears. The aftertaste is refreshingly light with just the right amount of bitterness. As the temperature rises, the acidity takes precedence and stimulates the tongue. The bitter taste becomes stronger. It is best to drink it cold as a food sake. Ingredients: rice (domestic), rice malt (domestic) Rice polishing ratio: 60 Alcohol content: 15%.

Drinking Gifu's Local Sake 2024 in Osaka⑱. Hida-no-Hana" booth. The current toji, Mr. Atsushi Tsuda, is a toji who used to be at Sekai-Ichitose in Wakayama. Hida-no-Hana" is a Junmai-shu made with 90% polished rice. Very low milled rice. The acidity and umami are strong and delicious. Junmai Ginjo Shoryunomai It has a sake-like flavor and a bit of acidity, but it was not very impressive. I asked him if he knew of any good places to eat in Hida Takayama for the Obon holiday, and he said "good places are full of foreigners" 🤣. What about the places where the locals go? When I asked him, he gave me a good idea, and when I went back and looked it up, he said it was a casual kappo and reasonably priced, but it was just about upscale 🤣.

Drinking Gifu's Local Sake 2024 in Osaka⑱. Hirata Sake Brewery is basically a direct seller, and I don't think they have any distributors. I've only seen Ikushima Shoten selling it. I've had a bottle of "Tobisagi" brand sake from this brewery in the past. I drank Hida-no-Hana, 90% pure rice sake made from Yamahai Hidahomare, Sake meter value +3 It has a nice acidity and umami. Junmai Ginjo Shoryunomai Polishing ratio 50%, Gifu and Mie rice, Sake meter value +3 The note says it's just a normal taste. Maybe it didn't leave an impression... The toji here is a former member of Minamikata's Sekai Issho. Icoma-san said it tastes like southern style. If you want to drink the taste of the old Minamikata, you might want to try the sake here 😊.

Outside drinking. This is my first time at Kura. The guy at the restaurant said it must be good because it was delivered even though he didn't ask for it. I thought it was dry, but it was not simply dry. It has a bitter taste at the end and lingers for a long time. It seems that there are different tastes. It is a secret which way I was divided. I heard it is read as Gokkarakuchi with Gokusen. The website did not look like a sake brewery.
