Rice used is Yamadanishiki
It is said to be read as "Iigin-junsei".
The exact kanji is Ya (酉へん也), which I could not find.
It has a gorgeous flavor that is hard to believe it is made from Yamahai.
It is fire-aged, but it also feels fresh.
It has strength, but it is calm and transparent.
There is a tangy, spicy taste on the palate afterwards, and it has a good balance. ❣️
I didn't know there was such a Yamahai!
