コジコジI met this bottle at a liquor store where I sometimes drop by.
I was excited even before opening the bottle, because it was a "surefire Kangiku" and distributed only in Chiba. The concept of using local rice and water to make sake that Matsuo and Chiba can be proud of is wonderful.
The sake was right in the middle of my favorite.
The aroma is gently fruity like a pear.
The mouthfeel is sharp and smooth, with a moderate sweetness and a pleasant gasiness.
The medium-bodied palate has a well-balanced harmony of acidity, bitterness, and spiciness.
The aftertaste is refreshing, with a dry bitterness that quickly breaks off.
The price is also very reasonable at around 1,500 yen for a four-pack bottle. The only drawback is that it is rare and hard to find.
The best accompaniment is sashimi and sushi purchased at the supermarket, and it goes great with them.

It is the only Kangiku standard sake that is relatively stable in its hometown of Chiba 🍶.
I bought it at Yajima Sake Shop TDL when I stopped by on a business trip to Kanto 😊.
Matsuo boast was brushed up in 2023 and became "Matsuo boast - Re:make-".
It is a rare junmai-ginjo-shu (junmai-daiginjo-shu) among Kangiku's sake, which is mostly junmai-daiginjo-shu 🍶.
There is also a raw version, but this time it is a once-heated version!
The appearance is a slightly pale silver-green crystal.
After some time, extremely fine gas bubbles float coarsely.
The nose has aromas of young banana and melon, including a gentle yet floral and freshness.
Discreetly serpentine and mineral.
Powdery rice aroma is very rich, like freshly pounded rice cake.
Slightly tart texture with a fine gasiness stimulation🫧.
The palate is gentle, with a moderate but juicy sweetness and a gentle acidity that spreads familiarly.
After the mid-palate, the wine recedes like an undertow, and then disappears without any change.
The aftertaste is medium short.
It goes well with Japanese food, Mexican nachos, and anything else. ☺️

It is indeed an image often seen at liquor stores in Chiba! For us, it's a precious bottle that we can drink leisurely 😊.
