Soft and gorgeous on the attack. Pleasant acidity.
Good balance of apple sweetness and light acidity.
The aftertaste is slightly astringent from ripe apples and has a nice aftertaste.
However, the impression is that the alcohol stands up a little. It depends on your taste, but in summer it is just right on the rocks to round out the taste. Maybe it's just too hot to want it on the rocks 😆.

Only one bottle of Junmai Daiginjo is brewed per season, a challenge sake brewed so that the three buds can become Mine-no-Hakubai no Hana (flower of Mine-no-Hakubai) in fine form!
