I drank it on the opening day because I thought it was the first Yamae Nishiki in this season's Shinshu Kamerei 😄.

Of all the Shinshu Kamerei I've had so far this season, this Yamae Nishiki is the most aromatic and fruity. ☺️

In the mouth, the light acidity is followed by a fruity sweetness, which is also fruity with a hint of incense.
From the mid-palate, the acidity flows down the back of the throat, and the beautiful bitterness is felt firmly as it finishes.
The finish is sharp with a good lingering aftertaste.
The taste is clean and full of flavor, and the flavor profile is clear as if it is an unfiltered, unpasteurized sake, with a vivid sweet flavor and acidity, as well as a beautiful bitterness.
Every time I drink it, I think it will be very tasty, but it is always even better than that. ☺️
When it comes to sweet and tasty fruity with sourness and bitterness, it is nothing but my favorite 😊.
I thought Yamae Nishiki had a distinct aroma and bitterness 🤔.
