This year's Risshun morning pressing is also from Shiga!
Fujii Honke brews the sacred sake for the Shinmai Festival, and this is a very auspicious sake that was prayed for at the neighboring Ohlong Shrine✨.
Last year, the sake tasted better when it was left to sit for a while after opening, so we drank it slowly again this year.
Rice polishing ratio 60
Alcohol 17%.
Fruity aroma, slightly fruity when you drink it. Soft umami, clear acidity, and a little spiciness. Still has a hard taste.
I'm looking forward to the change 🎶 because after a little time, it has a sweet taste.
On the second day, sweetness has appeared!
The pungency has lessened and I can feel the bitterness
It's easier to drink than the first day 🎶
On the 4th day, the sweetness follows after the umami, and the aftertaste is clean.
There is a sense of cohesion.
Even on the 5th day, it still has a fruity aroma and a flavor centered on umami.
This is delicious in its own way!
Last year I preferred the 5th day, but this year I enjoyed it earlier, from the 2nd to 4th day: ❣️
Also, the sweetness was stronger last year 🙄.
