I went to Kyoto Takashimaya to look for another sake and was disappointed that they didn't have it in stock 🥺.
Then... I found it! The sake I've been wanting to try!
A sake jointly developed by Sumikawa Sake Brewery and regional trading company Yamaguchi!
It is released in four seasons as part of the Poem of the Goddess series🌸🎐🍁❄️
100% Yamadanishiki produced in Hagi City
Polishing ratio 45
Alcohol 15%.
Slightly cloudy with a gorgeous aroma
Pitchy, melon-like flavor.
Sweet with a bitter aftertaste
Taste similar to Toyo Bijin
The second day, the aroma remains the same.
The bitterness fades and there is a lingering aftertaste.
The 3rd to 4th day, the aroma is still gorgeous.
The sweetness has calmed down and the umami has come forward.
Bitterness is almost gone.
I was wondering what it would taste like since it was a joint development, but it was sweet and umami that didn't disappoint. ❣️
The price, which is not much different from Junmai Ginjo, is also attractive 🤭.

Cream cheese 🧀 and sake lees mixed with miso and served with nuts
I had leftover mascarpone cheese on the day I made this and it was delicious!
