Today I attended the Nada Sake Project "Sake Culture Lecture" organized by the University City Kobe Industry-Government-Academia Platform to learn about the history and culture of Nada's sake, and heard a talk by Masataka Shirakashi, president of Kenrishi Sake Brewery.
His witty talk was interesting and funny, and I learned a lot while having fun. The president himself talked about the industry and answered various questions in a friendly manner, making me feel that the sake industry is an interesting one 😁.

Kenrishi.
Inheriting the taste of Kenrishi from the Edo period, it has a nutty, bonito-like, and rocky shore aroma. I drank the first and last sakes, but this one might be the best. An amino acid bomb.
Kuromatsu Kenrishi
Aroma is strong, color is light. Sake-like sweetness and richness.
Warmed up, it has a nice sharp flavor.
Very good taste.
Very tasty. The flavor is balanced well when heated. Good balance of umami when heated.
Mizuho Kuromatsu Kenbishi
A blend of 2-8 year old rice. The rice used is Yamadanishiki.
The reason it does not claim to be a junmai sake is that the amount of rice shaved differs from year to year, which is apparently a hassle.
It has the gentlest mouthfeel, but later on, it has a guttural taste.
Zuisho Kuromatsu Kenbishi.
The color is the yellowest and darkest. It has a powerful flavor, sharpness, and a sense of maturity.
