ひるぺこ
This time it is NUE.
It is a new brand from the Shirasugi Sake Brewery in Kyoto.
NUE is written in kanji as "鵺" (鵺), a monster from the Heian period. Just as Nue is a monster that is a fusion of four different creatures, this sake uses a blend of four different koji (white, black, yellow and mirin koji) and four different Kyoto yeasts.
The label is similar to the three types of chimera.
The crystalline appearance is spotted with fine bubbles.
First, it is served cold.
The top aroma is of gorgeous grapes and sweet koji malt.
When you take a sip, the bright sweet and sour juiciness is impressive! The full-bodied umami, which is like sweet grape juice but lingers on the tongue, is derived from succinic acid? The aftertaste is refreshing with a sharp acidity and fresh bitterness.
When warmed, the aroma of freshly cooked rice is gorgeous and the richness of the umami flavor is enhanced. I also like it warmed.
I wonder if cold or warmed sake is better to make the individuality of the sake clearer.
The president of Shirasugi Shuzo has a video tasting of NUE on their Instagram, and it shows that it has a familiar taste.
It's delicious, with Shirasugi Shuzo's sweet and sour taste with a richness of umami that gives it depth.
But you know, if I hadn't seen the insta, I wouldn't have known about succinic acid and malic acid, would I😓.
