In the case of the Black Swan made with Milky Queen, we kept the temperature high and made the yeast dance like crazy. The citric acid blends with the gentle sweetness of the rice to create a crazy sweet and sour taste. I almost went crazy dancing. Well, I had an image that black koji was too sour and somewhat difficult to drink. It is great to find the difference in the rice and the koji, and to brew a sake that you never get tired of drinking. It was delicious!
