This year I'm starting work in Gero and Takayama in Gifu Prefecture again, and the first thing I did was buy some Junmai Ginjo sake from Tenryo Shuzo in Gero, which I'd never had before, because I was curious about it.
It has a slight ginjo aroma, a gentle sweetness and umami taste, and then snaps out of it. It's an unpasteurized sake, but the alcohol content is 17 degrees, so you don't feel the weight of the alcohol. I think I might drink too much. It's delicious.
It is even easier to drink if you warm it up to about 40 degrees Celsius.
I'm drinking it while eating tempura of Himetake and cod roe.
