The 12th head of the family has revived a brand that was used until the end of the Edo period for the first time in 150 years. This is a collaboration of the old and the new, using the latest Hyogo sake rice called Hyogo Sake 85.
The sake brewed with this rice has a sharp, spicy flavor, but is quite mildly sweet (sweet by Yamana's standards).
The lingering aroma is very nice, tickling the nostrils and lingering for a long time. The top aroma is sweet like whipped cream.
The mouthfeel is very full and round, and as it rolls down the palate, the acidity comes out. The change in flavor is enjoyable as the wine rolls down the mouth.
