It is written "QA" and "Kue". We had a comparison of two sakes, a standard and a test brew. The brewery's website and the bottles are also labeled "Q/A," but the product name on the back etiquette is QA, so I'm following that. Kue is the name of the place, not the fish. Miyake Shuzo, founded in 1819, brews this sake using 100% Yamada Nishiki from its hometown of Kue, Kasai City, Hyogo Prefecture. So, let's start with the standard sake, QA Mujirushi Unfiltered Unrefined Nama Sake. It has a light cloudy color. The aroma has a refreshing koji acidity, with a hint of apple in the distance. The fresh koji goes through the gas and the sensation of biting into an apple, leaving a fresh and sweet taste. There is also a release of bitterness and it is very sharp. It is crisp, but it is a taste of my favorite section, and it is delicious.
