Finally, a good one. Kuheiji's Betsuatsurai Junmai Daiginjo. It has been quite a while since I have had a Kuheiji. It is well-balanced without daring to show too many characteristics. The aroma and taste are both wonderful. It was the perfect closing drink. Thank you very much.

The second glass was from Sanchoroku Farm. It has a strong gassy taste, like champagne. The balance of sweetness and spiciness is exquisite, and the sharpness makes it easy to drink. The anticipation is high as the nigiri finally begins. I honestly don't remember the difference between the different farms, but it was probably the most gassy and refreshingly sweet. Roku, Ni, and Go, in that order?

I don't buy Mitsui no Kotobuki myself because of its dry image, but I liked this one. It is a summer sake, fresh and fruity. It is the type of sake you would want to drink in summer, as it has a pleasant lactic acidity. It was also perfect for the first half of a sushi snack. I really appreciate that you always choose great sake (that I like).

The first Koshi I ever drank was this year's Risshun Asa Shibori. I remember being a bit surprised at how modern it tasted despite its old-style name. And this time it was Raikou. This label looks delicious. I was attracted by the label, which was completely different from my preconceived notion of Kouko. The mouthfeel is fresh, and I like the slight gassiness. But after that, it hits you pretty hard. It's a thunderbolt, right? It's an adult's gift to drink like a whiskey. Personally, I think it is a little heavy.

Monsoon is the most popular Laughing Four Seasons' kijoshu. I was attracted by the fact that it was a special edition and the modest (luxurious) label. As it turned out, I was in favor of Monsoon. For a kijo-zake, it is rather refreshing and has no peculiarities. The elegant and light taste was new for a kijo-zake, but I also thought that it did not need to be a kijo-zake.

The perfect muscat. I have never really compared it to a fruit, but this is definitely a muscat. The combination of the crispness of the alcohol and the pleasant tartness of the fruit gives it the name FUZZY GREEN. It is refreshing. I like the fact that the label is stubbornly "Masamune" while still having such a distinctive flavor!

Houou Mida looks like I had not seen much of it. I like Black Phoenix and it looks delicious when black. The floral and fruity feel is like a Mita, with a gentle sourness that is sharp. However, as time goes by, the sourness disappears and it is quite a mild sweet and refreshing type. It is delicious. It is a sake to be enjoyed on its own, not with food.

The brewery was destroyed by fire about two years ago. Now, the couple is making Yui at a different brewery. This time it was the Sanzen Sakura type. The other one is Raifuku, I think. Basically, it seems that the only difference is the brewing water. I should have bought both. The taste is mellow and fruity, and has the depth of a noble sake. It is not a trendy sweet sake, but has strength. It is a luxurious taste that should be savored well on its own.

It is impossible to clearly define what one's favorite taste is, including one's mood, but if there were to be a definition of good sake, it would be this one, with a compelling taste. There are many factors such as sweetness, umami, dryness, aroma, sharpness, etc., but this is the base. This is the base of sake.

I bought another one of these Sanzu. I can't help it, it's delicious. Something about it made me feel it was drier than the last time I drank it. I may be mixing it up with Futafarm, but the overall flavor of the rice and a hint of sweetness spread out, and the bitter taste made it seem a bit drier than I imagined.

I've been drinking a lot of sweet sake lately, which I like, and I'm a little tired. I was looking for something a little more orthodox and tasty, so I went for Collage and Miyazumi, but for some reason I bought Ippakusuisei MovingSaturday. I still can't explain why I bought this one, but it is delicious. I think it is one of the sweeter Isshiro Suisei. It is basically composed of umami and sweetness, and is held together by a moderate acidity. The aroma is gorgeous and pleasant. In the end, it was my favorite sake again.

Abeno Green is probably my first. At 13% alcohol, it seems light. It also has a pleasantly shwashy, spring-like feel. It has a pleasantly tasty and acidic flavor, and is rounded out by a sweetness that is not overpowering. As you drink it, you can feel some lactic acid bacteria, and there is a sense of calpis. Overall, it is so refreshing that it can be enjoyed while eating, but it is recommended to drink it slowly because you can enjoy the aftertaste rather than the sharpness.

The perfect sake for people who like a clean dry sake and me who like a clean sweet sake to drink together. It has a beautiful mouthfeel, and the umami and sweetness are well balanced. There is almost no acidity, and it finishes quickly with a hint of bitterness. It is a sake that can be enjoyed as a mealtime drink or perhaps just as a sake, and you will never get tired of it.

I went to the sacred Koyama Shoten for the first time. If there were such a store nearby, I would go there every day. I am glad there is no such a place nearby. There were many things I wanted, but I started with Kudokibe Jr. Even for a junmai daiginjo, it had a rather robust umami, wrapped in a refined sweetness, and finished with a gentle bitterness. It was delicious.

Aka Tube with a clean fruity feel. A bit expensive. No description but Junmai Daiginjo specs. I had never seen this one before, so I was curious and bought it. It has a fresh aroma and a clean mouthfeel, which is typical of Akabu, but the acidity is a bit different? I think this is a matter of taste, but I prefer to taste the acidity at the beginning or at the end, but the sourness is felt in the middle. It is a slightly different Akabu.

I found a bottle of Jikin's Sake Mirai that had somehow fallen asleep at the liquor store. It was a 2017 aged sake, but I bought it just to see what it would be like. It was no good. The umami in the middle was gone, and there was a peculiar sourness and bitterness. The aroma was mild and chocolatey. I honestly don't know if I simply don't like aged sake or if this aging process is not going well, but I would like to try a properly aged sake next time.

The last one is the birthplace, Five Farms. The last time I bought and drank it myself was at two farms. I honestly can't tell the difference in taste between the two farms, but I think this one is a little more refreshing. I think the Ni-Farm was sweeter than the other one. (This is completely my own personal opinion.) At the end of a meal, it's very nice to feel it flow nicely, but in reality, it's a delicious drink at the beginning, in the middle, or anytime.

Only those who chase two hares will catch two hares. Such a cryptic catchphrase, isn't it? The taste is soft, with a sweetness that is typical of Aizan, and is nicely integrated, just like a Junmai Daiginjo. The aroma is moderate, and the overall sense of cohesion is high for a draft sake. It must be really hard to make. When drinking it, you want to kill two birds with one stone.
