八重垣　純米吟醸山田錦ひやおろし限定 Yaegaki Junmai Ginjo Yamadanishiki Hiyaoroshi Gentei 精米歩合　60% Seimaibuai アルコール　15％ Alcohol Soft, smooth mouthfeel. Really easy to drink, as is. We were “sampling” this a bit too much; let’s try it with food! Mmmm. It pairs really well with sashimi & sushi (鮭, あわび, 鰤, マグロ, 中トロ). This Yaegaki ヤヱガキ even pairs nicely with ラ　フランス pears but not so well with 柿の種 senbei.

醸し人九平次　純米大吟醸 自家栽培、山田錦100%使用 黒田庄に生まれて Kamoshibito Kuheiji Jika Saibai Yamadanishiki 100% Grown in Hyogo-Ken, Kuroda-Sho 精米具合　50% アルコール　16％ 兵庫県産山田錦100%使用 Initially a little fruity flavored but has some sharp bitterness. Subsequent cups are full flavored deliciousness. I can’t stop drinking it. Holds up well even with a strong flavored sukiyaki. Definitely a savory Sake, the flavor lasts a while. I could drink this by itself without food. Delicious!

東洋美人　限定　純米吟醸　亀の尾 Touyou Bijin Gentei Junmai Ginjo Kame no O Much more mellow and softer than the Manazuru. It has a slight Koji fragrance and flavor. Lots of umami and a little tanginess and melon flavor. Matches well with salmon tataki (but sadly, not hotate sashimi) Pairs pretty good with persimmons.

真鶴　超辛口　特別純米 Manazuru Cho-Karakuchi Tokubetsu Junmai 精米歩合　60％ Seimaibuai アルコール　16-17% Alcohol 日本酒度　+11 Nihonshudo 酸度　1.5 Acidity アミノ酸　1.3 Amino Acid Yes, quite dry with a deep, maybe oaky flavor. Perhaps not the best match for sashimi/sushi. Too strong for hotate sashimi. I think we will save some for tomorrow’s sukiyaki. とても辛口とは思えないんだけど、旨味とかがあまり少ないかな。こってりした料理に合うと思う。例えばおでんとかもしかしたらクリームタイプのパスタとか合うかもしれない。

On the second day this Manazuru has mellowed a bit, allowing some vanilla flavors to appear.

As expected, this Sake pairs well with sukiyaki! Yum!

風の森　ALPHA 1 純米　無濾過生原酒 Kazenomori ALPHA 1 Junmai Muroka Nama 精米歩合 Seimaibuai 70% アルコール alcohol 14% 無濾過 unfiltered 無加水 no added water 生酒 unpasteurized Mildly sweet, with a slightly sour tanginess that reminds me of yogurt whey. I like it, but I think some of my friends might hate it. Brewed in the 菩提元 Bodaimoto method, it’s a truly traditional Sake.

國暉 Purple 純米大吟醸 The Kokki Purple Junmai Daiginjo To be honest, I bought this a while ago because of the beautiful cloth brocade label. Maybe I didn’t store it properly because the flavor was ver different from what I expected and from how other people described it. To me, it had a strong grassy/ Taru flavor (not fruity like the website claims). As such, I thought it went well with 白焼うなぎ. It also went well with 🍑 peaches. I’d like to try it again to confirm the flavor (but my wife says NO!)

OK revisiting this Sake after a few days, and it definitely has mellowed.
