Today is my wife's family's annual New Year's visit to the Naritasan Betsuin temple in Kawagoe. Kagamiyama Oorigarami from Kawagoe's Koedo Kagamiyama Sake Brewery. I walked with my father-in-law through the streets of warehouses to the Matsumoto Soy Sauce store and bought some. It comes in softly and has a mellow, "delicious" taste, but not too sweet. It is glossy, yet calm. Every time I drink it, I end up drinking a lot of sake and end up drinking a four-gouple bottle, which I think means it is delicious👍. Every time, I finish it on the first day, so maybe the taste will open up on the second day or later 😅.

Tasting at the brewery. Wine yeast brewed 🍷. It looks rare so let's drink it 🍶. The color is clear. Smell is a rich sweet and sour aroma ☺️ Taste is a mixture of sweet and sour. Maybe apricot is close. The sweetness has a slight tartness to it. It's like a candy cane at a fair 😋. Ginjo aroma is a rich fragrance with a hint of sweetness 😳 Slightly sticky sweetness is a modern sake that is not wine🍷like 🍶. It's not the sake, but the alcohol content is low at 12 degrees, so even those who are not used to it can easily drink it 🤗.

Tasting at the brewery. They were out of Junmai Daiginjo, so I couldn't taste it, so I decided to get Junmai Ginjo 😊. The color is clear. It does not seem to have any aroma. Taste has rice flavor🌾, no sweetness. A little ALC feeling. Little ginjo aroma. It is a straightforward classic type of sake that is what is called light and dry 🍶.

It's not good. Oil floats on the surface. It tastes so bad. I still feel it on the third day after opening the bottle. Sweet taste. The label says it's made with all the sake brewer's stock, but isn't it generally under-processed?
