Kinryo's Junmai-shu made with olive yeast. It has a fresh aroma like muscat. It has an astringent and acidic taste like white wine. It is delicious, but it does not have much of a sake flavor, so there are different tastes. Personally, I prefer something with more sake-like characteristics, so I don't think I will be repeating this for a while.
