Takenoko
The memory of this sake still stays with me. To be honest, I wasn’t sure what to think after the first sip.
But as I got accustomed to the taste it was truly something special. I don’t fully understand the process but the result is complicated and sophisticated at the same time. Notes of apple and maybe cantaloupe, unusual but amazing rice taste, striking balance between sweetness and acidity, and a very soft addition of wood. Perhaps best enjoyed chilled, on its very own. Absolutely wonderful!
