As the store's description suggests, it has a strong umami and acidity, and is full of the juiciness (riceiness) of an aged sake.
The more it is heated, the more the acidity mellows, the more the umami stands out, and the more mellow it becomes.
Because the acidity does not linger, the sake has a nice sharpness after the umami has been enjoyed, and is easy to drink without the harshness often associated with matured sake.
