Let's try Sherlock again tonight... 😆. This time Tojo Yamadanishiki ️. Along with Yoshikawa, this is the holy land of Yamada Nishiki😃. The aroma is clean and banana-panana like 😁. The first impression on the palate is rice flavor and some bitterness🤔. Compared to Yoshikawa, it tends to be drier and has a sweetness like melon candy. The bitterness gives it a nice crispness. The bitterness makes the sake sharp and crisp. The bitterness makes it a very crisp sake 😋. To me, Yoshikawa is more light and refreshing. I was under the impression that Tojo was more mellow. I'm not sure if this is a good or bad thing. I'm not sure if it's a good or a bad thing, but it's a good thing.
