Yamazan, Kinmon Nishiki was opened 🎉.
We just got word that Yamazan's new sake has been released 🤩.
I must pick that up as soon as possible: ❣️
But first, we have to drink the last of the fire-brewed Yamazan that will be in our fridge for the last time this year 😉.
So we've had a lot of Yamazan this year, but the last one to appear is Kinmon Nishiki: ☺️
In your post on sakénowa, it seems it tends to have a strong astringent and bitter taste 🧐.
That's a bit of a pet peeve of mine... 💦.
So I drank it with this previous information in mind 😆.

First, the aroma
Refreshing and gorgeous aroma!
In the mouth, the gentle sweetness gives way to the umami of Kinmon-nishiki, and then Kita Kita Kita from the second half! Astringency and bitterness!
But I was prepared for it, so it's not that strong!
Yes, it's okay at least this much 👍.
No pungency, no gassiness.
Kinmon-nishiki is interesting. The change from a firm sweetness at first to bitterness and astringency gradually is amazing🤔.
I thought it was a distinctive sake rice 😚.
But Yamasan is delicious 😋.
Different sake rice tastes totally different, and I have my preferences, but they are all delicious ✨.
New Yamasan sake, I'll have to stock up as soon as possible 🚗💨.
I can't wait to see how Yamazan evolves in the future 🥰.
