This week, I decided to go with a sake from Hokkaido, a region I rarely have a chance to drink, which I took to a liquor store I visited the other day after much agonizing.
So, we will open a bottle of Chitose Tsuru by Nippon Seizake.
This time we will open a bottle of Fuyu-Higuma.
This is the first time I have tasted this brewery since last year's Summer Higuma.
Let's enjoy it right away.
The first day
The top clear liquid.
First, the aroma. It has a refreshing aroma.
When you put it in your mouth, you will taste a refreshing sweetness, followed by a pungent spiciness and bitterness.
The lingering aftertaste is sharp with a firm bitterness.
It is a refreshing sake with a smooth taste that can be enjoyed from start to finish, and goes well with a meal.
Nigori (nigori)
The mouthfeel is firm with just a hint of sweetness.
The middle to the latter half of the bottle has a bitterness.
It is very tasty with an increased drinking experience.
The sweetness and umami in the bitterness is nice as you continue drinking.
The second day
The top clear layer.
When you take a sip, you will feel sourness, bitterness, and a hint of sweetness.
The bitterness lingers in the aftertaste.
Nigori (nigori)
The sweetness and umami also increase and it is delicious.
The second half is nicely balanced with lingering bitterness and spiciness.
A good sake really makes you feel blissful.

It was a painful mistake to get it thinking it was a new sake but it was not, but it was the first sake from Hokkaido in a long time and it was delicious and blissful ✨.
