Mouri Sake Brewery in Fukui Prefecture. There is Echizen Kaygetsu and Echizen Kaygetsu. I wonder if Echizen Kaygetsu uses locally grown rice?
◉Mouri Echizen Kaygetsu Special Junmai
Mineral and sharp acidity. The taste is slightly astringent and spicy with a long aftertaste. Personally, I find it a bit spicy.
I am not sure whether to register Sake no Wa as Mouri or Echizen Kaygetsu.
