Aichi Pref. Nagoya City. Toshun Sake Brewery Co. Yamahai Junmai Sato Tohei We bought this sake at the same time as Biwa no Chouju. The owner, who is very assertive, told me that we were the only company in the Kansai region that carried this sake. I bought it because it seemed to be refrigerator-friendly. The color is clear with greenish tints. The top aroma is mild and not very noticeable. The mouthfeel is smooth and slightly full. On the palate, the first impression is of mild citrus and lactic acidity, followed by a smooth, grain-like, full-bodied flavor that counteracts the acidity. After that, a lingering milkyness quickly clears the palate and refreshes. The acidity can also be felt, and although it is of the rich umami type, the rest of the palate is clear as if nothing had happened. This kind of Yamahai is also interesting. It is a sake that does not interfere with the food at all, but gives a sense of orthodoxy. Let's leave the rest lying around and drink it after it has been left to stand. Ingredients: rice (domestic), rice malt (domestic) Rice polishing ratio: 65 Alcohol content: 15%.
