I went to a liquor store to try some sake from the Kansai area and found a sake from Hiroshima Prefecture.
It was labeled "Kijoshu," which was a type of sake I had never tried before.
I bought it to see what it was like.
Polishing ratio 70%, yellow malted rice, 65% premium rice
Alcohol 13%, Acidity 3.4
I thought it would have a lot of miscellaneous flavors, but I could hardly taste any. It is more like a plum wine or fruit wine. The good thing is that it is not sweeter than fruit wine and less acidic than plum wine, making it quite easy to drink.
This kind of sake is also good.
I think it would probably be a good choice for those who are looking for a fruit wine with less sweetness.
