bonchi
Almost colorless and transparent. Full aroma reminiscent of lactic acid beverages. The aroma is strong. Sweet and sour mouthfeel...but the sweetness is a little moderate and sour. It is not a refreshing sourness of the petit type, but a sourness of the sour type. The unique lingering taste leaves a moderate astringency and umami flavor. The aftertaste is short. Mellow sake.
It is dry because of its moderate sweetness, but without bitterness, probably different from what many users would call dry.

bonchi
When drunk cold, it had a strange acidity bias, but when we warmed it up on the 17th day after opening, the umami increased and the balance with the acidity became exquisite!
This is a sake that should be drunk warmed!
