This time it is Onisuke. It is made by Kitamura Shuzo in Yoshino, Nara Prefecture, and the main brand name is "Shojo". Onisuke is a special junmai hiyaoroshi sake made from 100% Kinuhikari rice grown in Nara Prefecture. It has a slightly fragrant rice-flavored aroma. When you take a sip, it is a powerful sake with strong acidity and alcohol. The taste is mellow and you can feel the dark mature flavor of the rice as if you are chewing on it. The aftertaste is refreshing. When I heated it up, I felt the alcohol and acidity were too strong, so I personally prefer to drink it at room temperature or lukewarm. It's the complete opposite of fruity sake. It's a sake that makes you feel like you're drinking sake for the first time in a long time, and it's the perfect sake for autumn, when the ears of rice in the rice paddies are ripening and you can enjoy the flavor of the rice ^ ^.
