Kido Izumi Afruge no.1 Aged in red wine barrels No.1 Red wine barrel No.2 White wine barrel Both are amber in color. The aroma of aging rises. No.1 is richer than No.2. It has more richness than acidity. The sourness is longer and the fullness is still there, so the impression is that the sourness is put on and prolonged. Compared with the noble sake of Afs stratae, Afruge has more acidity. I had a bucket with cured ham, pickles and cream cheese on it, and grilled Spanish mackerel. The sourness and the cream cheese matched well, but the rest of the dishes didn't come together well. The sourness was so strong that it overpowered everything else. It might have been better to have a more rich eel-like dish. However, I felt that this is a cup that will expand the range of sake. I would like to find a better pairing.
