Since it is the weekend, we decided to open another bottle today.
Today's sake is THE REBIRTH TIME MACHINE - OUROBOROS, a noble sake made from old sake that has been aged in the brewery for 16 years instead of brewing water.
I found this sake at a liquor store in the neighborhood of a nearby station, and when I told the owner that I like kijoshu, he recommended it to me.
This is the first time I have had this sake from this brewery, which is located on Sado Island, but it is the same brewery that makes Gagakuyo, so I am sure I will continue to patronize them in the future.
Now, today's Ouroboros.
The sweetness seeps into the mouth when you take a sip.
The sweetness is slightly citrusy.
The spiciness is only faintly pungent after swallowing. There is almost no pungency or bitterness, just a blissful sweetness that spreads in the mouth.
However, it is not a sticky sweetness, but rather a delicious and easy-to-drink kijo-zake that flows smoothly and clearly in the mouth.
As I think every week, a good sake on the weekend is truly blissful lol.
