寅之助
The first sake of the new year is from Asahikawa Sake Brewery in Yamagata Prefecture🍶.
It is a small sake brewery and most of their sake is distributed locally, so it is a brand that is not registered with Sake-no-Wawa, but it seems to be made with local sake rice from Kahokucho☺️.
It has a mellow mouthfeel, then the umami spreads and has a nice sharpness. The umami is not as powerful as Yamadanishiki, but rather somewhat mild and refreshing 🌾.
It is clear without any cloying taste.
It is exactly the feeling of a sake made with traditional sake rice and methods, but I had the impression that I had received a genuinely good sake 😊.
