Shiga Sake Brewery / Kibusume, Koka City, Shiga Prefecture
Kibusume" is a sake brewery in Koka City, Shiga Prefecture, which also produces Shiga Biwako Cider and Koka Cola, both of which are unique to the area.
Kibusume is stored fresh in a temperature-controlled cellar and is not heated until just before shipping (before bottling).
Some of the stock is already gone.
They had some great old sake, but it seemed to run out quickly, so I was only allowed to smell it 🤣.
Ki Seimei Musume Junmai Sake Nigori Sake
It is a nigori-zake with a strong rice flavor and a sweet sake-like texture, but it is bitter.
I wanted to try more, but I had no choice but to move on. boukenIt doesn't have a fresh taste, but it has a rich sweetness and a unique flavor.
There are no details on the label, and the shop said it wasn't raw, but I searched and found information that it was raw sake, so I'm not sure. It's a bit too heavy for a hiki-ire. The lees are amazing.
The cap was so hard I had to use pliers.
It tastes like a sake that's been made using the old method. boukenIt doesn't have much of a raw feel to it, but it doesn't have much of a fire-retarded feel either, so it's probably just a raw sake, as the few sources say. boukenAnyway, it is a unique taste.
