The sake rice, Tsurugi Aiyama, is Aiyama produced in Mima City, Tokushima Prefecture, using "Aiyama" as the seed, and is the second sake brewery to produce it, following Miyazumi Meijo, which produced "Sharaku". It has a gorgeous, fruity, white peach-like aroma. It has the creaminess, rice flavor and richness that only orikara-mi can provide. The sweetness and acidity are well balanced, juicy and rich. While retaining a firm umami, it has a refreshing sharpness. It is one of the most gorgeous and juicy of the Kangiku varieties. It is easy to drink yet has a strong body and the presence of rare rice Ken Aizan can be felt, making it a sake with a strong presence that can be enjoyed on its own rather than as a mealtime sake. It is a delicious 😋.
