A very small production of only 200 kilograms. I thought it was a sake made with lily flower yeast, but it was a sake brewed by Mr. Yuri Inoue, the toji (master brewer)! Rice used: Yamadanishiki Alcohol content: 15%. Rice polishing ratio: 58 You can feel the umami of rice right from the start. It is my favorite sake with moderate sweetness and a good balance with acidity. On the second day, the round sweetness increased. It went well with bonito tataki.
