Drinking Gifu's Local Sake 2024 in Osaka (15) Kinkazan" booth. Mr. Bouken had been curious about this booth for a long time and wanted to come as soon as possible. Mr. Shoji Adachi, the fifth generation of the brewery, is the sole brewer of sake, from making the yeast, to pressing, to bottling. Kinkasan is the name of the mountain where Gifu Castle is located, and we took a ropeway up to the halfway point. Kinkazan Sokyu Junmai Ginjo Unfiltered Unrefined Nama Sake Tatsu Kinkazan Sokyu is a very rustic sake, with a heavy, heavy flavor, and Bouken-san said it had an off-flavor.... It seems to have some kind of aroma. Kinkazan Nakakumi Junmai Nama-Nagahara Sake The note says it was rich and robust, but I don't think it left much of an impression. I went to the food booth to fill my stomach. About 3 people in front of me in line, I was told they were out of stock💦. I asked bouken in the next booth to buy the same thing for me.

Drinking Gifu's Local Sake 2024 in Osaka (15) There is no official website when I googled, and this is the brewery I was most interested in this time. The URL is in the booklet we got, but it doesn't appear... No brewing company is registered in Sake no Wa either😅... This is Adachi Sake Brewery's sake! I wanted to visit first, but it was crowded, so I had to go later, at the end of the day. We drank Kinkazan Sokyu Junmai Ginjyo Unfiltered Nama-shu Tatsu Polishing ratio 55%, Hidahomare, Sake strength 0 It's sweet and tasty, but there are some off-flavors that bother me. Kinkazan Nakakumi-Junmai Nama-no-Nama-Shu Tatsu Polishing ratio 60% Hidahomare, Sake meter value +7 Solid taste.
