Sake and Fish Shindo is an izakaya (Japanese style bar) with a relatively large selection of pre-prepared sake and an extensive menu of 3 different kinds of drinks. The problem with this place is that they have a brand name, but it's just Junmai Ginjo and you order it with a QR code. You have to ask for the details 😅and I think most of them are a bit old when you look at the production year. This time, I ordered several brands, and when I saw the word "Kitajima-san", I clicked on it! What came out was an odd one, which I didn't expect 🤣🤣🤣. This time the rice is from Shiga Asahi, an established Omi rice brand, which once disappeared due to difficulties in cultivation and early maturing 😳. Let's eat ✨ I couldn't smell it. There is no gas. The mouthfeel is smooth and clean. It has a classical feel, a gentle umami, a refreshing acidity, a little sharpness, and a beautiful aftertaste. The photo shows the first serving of tsukidashi.

This sake is made from rice called "EN" Shiga Asahi. This is my first sake from Kitajima Brewery. We had it warmed up. The first aroma is sweet with a hint of acidity. The first sip has a sweet aroma with a hint of acidity. It has a good balance of acidity, sweetness, and umami. Delicious ✨.
