Oh no, the one I was drinking before was Junmai Ginjo too, I should have had another one. It's been 5 years and 9 months since I've had Tamba. A full-bodied sweetness comes from the back of the throat along with alcohol. It is a rich sake. It also has a little bit of astringency.

Sake from Hikami, Tamba City, Hyogo Prefecture. Not a member of the sake brewers' association. There is no information on stores that sell it in my living area around Kobe. There is almost no information on the Internet either. However, there have been several reviews of Uchida Sake Brewery's sake posted on Sake-no-wa-ue within the past year, and when I was looking for it, I found it at "Grandma's Village," a roadside station in Tamba, where I stopped by on my way home from work! I got it instantly! I was so happy that I took a lot of pictures of "Chitan," the mascot character of Tamba City, who wandered into the souvenir shop of the roadside station (lol). A little sweetness in the mouth. The spiciness comes out strongly right after that. Then it disappears quickly. The taste is clear, crisp, and refreshing. The flavor seems to be more effective when served cold. Would it be better served cold instead of at room temperature? How about when it is heated up? The spiciness is light. The spiciness is light and the sweetness comes out a little later. The balance between the firm sweetness and moderate spiciness, without any spines, and the cleanness of the aftertaste, which is still there even when the sake is warmed up, are well balanced and pleasant! The more you drink, the more it feels right at home on your tongue. The more you drink, the more it feels right on your tongue. I think I prefer heated sake, where you can taste the mellowness of the flavor and the sense of unity. (Note: I drank it cold. It is still refreshing and clean. I think the freshness and cleanness is suitable for summer.
