This sake is called Kudokutei-de, Jr. I heard that this Jr. series is going to be released in various color labels. This is a white label. Rice: "Yamadaho" from Banzu Rice polishing ratio: 44%. Sake meter value: -1.0 Acid level : -1.2 Amino Acidity : - 1.2 Yeast used: M310, Association 1801 Alcohol content: 17-18%. Price: 1.800ml 3.780 yen (tax included) This is the third in the Junmai Daiginjo series of limited edition Junmai Daiginjo from Kudokudoge, a ginjo brewery located in the rice fields of the Shonai Plain in Yamagata Prefecture, where Super Managing Director Toshinori Imai handled the whole process. Imai Toshinori Imai, the next generation of Kudokidoge, is a promising young brewer with a great taste for the future, and he was selected as a member of the sake tasting committee at the age of only 28 years old.
