With the help of Professor Kaneko of Okayama University of Science, this sake was experimentally brewed at Kamishin Brewery using yeast isolated from "Muscat of Alexandria," a specialty of Okayama Prefecture and the queen of fruits.
As a result, the alcohol content was limited to 12%, but the lightness, beautiful acidity from the yeast, and elegant sweetness made for a fruity, easy-drinking sake reminiscent of Muscat.
We hope you will enjoy this product, which was created with the challenge of "conveying the power of Okayama's various ingredients through sake.
