This Junmai Ginjo is made from 100% Tango Koshihikari, the best rice in Tango. The fruity aroma, gentle sweetness typical of rice, and moderate acidity are very delicious. It is said to be the only sake brewery that does not use rice suitable for sake brewing, but only uses rice that makes delicious rice to brew sake. It was founded in the Edo period. It's nice to see such commitment and challenge without being bound by history.
