It has been a long time since I encountered a sake from a brewery in Tokyo. When served cold in the mouth, it was a bit, mellow, not so much the schwashiness of a raw sake.
When we warmed it up to lukewarm, we could taste the flavor of the sake, the rice, and the mellow flavor.
I'll have to experiment with lukewarm to heated junmai sake!
