Chimera is too good to be true ⚾
This is the Shirakiku I got from Ishikawa-san in Shijo Takakura, Kyoto. It's made entirely from Koshihikari rice grown in Tango, and the koji is black! I'm very particular about it. I was a little hesitant about the yellow liquid, but when I put it in my mouth, I was amazed. The umami (flavor) runs smoothly and the unique taste is light, and for some reason, I can't stop drinking it. I personally don't think it's my favorite type of sake, but I'm hooked 🦅 It's delicious.
