Daiginjo-class sake made for the sake competition. 40% Yamadanishiki. It is made from 40% Yamada-Nishiki. It's delicious. It has a nice balance of umami.
◉Ume Bijin Junmai Daiginjo
The rice used for this sake is Shizukuhime. It has a moderate sweetness and a moderate umami. I thought I didn't like Shizuku Ehime, but after tasting it carefully, I began to enjoy it.

This is also our first visit to the Umeibijin Sake Brewery in Yawatahama City.
Yawatahama has a small population, but it has a great shopping arcade. I'd like to visit there once 😆.
