Takao ◉Takao
Daiginjo-class sake made for the sake competition. 40% Yamadanishiki. It is made from 40% Yamada-Nishiki. It's delicious. It has a nice balance of umami.
◉Ume Bijin Junmai Daiginjo
The rice used for this sake is Shizukuhime. It has a moderate sweetness and a moderate umami. I thought I didn't like Shizuku Ehime, but after tasting it carefully, I began to enjoy it.
I was thinking while drunk that this brewery also makes delicious sake, but I forgot to take a picture of it, so I borrowed it from bouken.
