This time, it is Mifukyu Shuzo, which is known for its Mitsuriboshi. It is an extra version of Mitsurensho, and it is the sake which Mifukyu Shuzo, which is good at Yamahai, newly challenged to make Ikatani. This is the one that I can't help drinking ^ ^. The initial aroma is slightly sweet and refreshing. When you take a sip, the refreshing acidity and thick umami spread, and in the latter half, you feel the firm spiciness and it lingers. As it warms up from cold sake to room temperature, the sweetness becomes a little more pronounced. If you open the bottle and let it sit for a while, the flavor will become a little more rounded. It will be enjoyable for a long time. The taste is different from the floral and fruity taste of the black Mitsuriboshi I have had before. It was interesting to read about the process of trying to make a traditional sake on Mifukyu-san's blog.
