I came across Rusty Cat Rock last year.
This year marks the 10th anniversary of its release.
It is a daiginjo with a rice polishing ratio of 39%. It is basically sweet with a touch of sourness, but it finishes with the umami of the rice and a bit of bitterness. It was quite delicious.
