Quite yellow. Aroma like sherry or brandy. Dry, slightly acidic. Soft and sort of cheese-like aftertaste when swallowed. Numbness in the mouth. Anyway, the aroma is good. Is it sake?
Obtained a few months ago through crowdfunding.
It is a sake brewed with ccPTM18, a yeast extracted from wine barrels by Professor Onaka of Gakushuin University that produces less 4-vinylguaiacol, which is the cause of the unpleasant odor produced by wine yeast, and is higher in lactic acid and considerably higher in pyruvic acid, and aged in wine oak barrels.
Is it sake? おっstomach
No blowout to speak of, although there is a large warning to be careful opening the bottle. However, the large bubbles rising show potential.
Creamy aroma. Strong gas. Quite dry. It feels like the back of the cheeks are squeezed. After swallowing, it is almost bitter or gruesome, but on the contrary, it is good.
I got it through crowdfunding.
This is the first time I supported it. They seem to do this every year. I want to support it.
This sake is made by Professor Onaka of the University of Tokyo, who isolated wild yeast ccPTM1 from wine must, analyzed it to be Saccharomyces cerevisiae, verified that it can withstand sake fermentation, and tried to brew sake!

Polishing ratio 60%.
The yeast used is ccPTM18, which is a wild type of wine yeast 😳(they collect it from oak barrels during wine fermentation), so it tastes like white wine with acidity and goes well with cheese🍾.
This year they also have a Junmai Ginjo Genshu that is aged in French wine oak barrels, so it seems they are trying different things each year! It is very delicious and recommended.
