Banana aroma. The alcohol is 16 degrees, so the aftertaste is cleaner than I expected. I'm speaking from the side of someone who doesn't like alcohol, but I think it would have been interesting to make it sweet and expand the base of sake like Mio, rather than making the aftertaste clear because of the banana. It's fun to be able to drink sake with different yeasts.
