This is the second Nihonkai Shoya, and in a way, you may only find it here in Ishikawa.
Takashimizu is on the menu. Takashimizu is the name of Kumiko Okae.
Bishu Blancman is Ms. Hiromi Manikawa, and although I had little interest in sake when I was a student, I remember both of them. Of course, I drank both Takashimizu and Hachiman, but I had little impression of them.
I was so nostalgic that I ordered and asked to take a picture of the sake bottle, and here it is.
It seems that Takashimizu's brand is exclusive for restaurants.
The aroma is gorgeous, perhaps in the Akita style. The umami flavor is delicious!
