I bought this at a local liquor store in support of the Noto Peninsula disaster. The exquisite umami is Noto Peninsula yeast! The spiciness came from the hard water of Kaze no Mori, and the sweetness of the rice that lingered to the end had the aroma of Yamadanishiki!

It's refreshing, but the sweetness and spiciness are a perfect marriage, and it's a 2038 Japanese sake!
This is a surprise! It's dry like an old second-grade sake, but the goodness of the water makes the aroma soak into your throat when you put it in your mouth, and the sweetness is quickly followed by the spiciness. Costa is the best 😀.
Comparison of Comet, Ginpu, Kitashizuku and Michi-grown Yamadanishiki, they say Ginpu and Comet separate, but surprisingly Yamadanishiki is usually better balanced than the comparison of sweet and dry Junmai Ginjo of acidity strength.
