I bought this at a local liquor store in support of the Noto Peninsula disaster. The exquisite umami is Noto Peninsula yeast! The spiciness came from the hard water of Kaze no Mori, and the sweetness of the rice that lingered to the end had the aroma of Yamadanishiki!
